autumn pumpkin sour

35ml Chase Marmalade

20ml Pumpkin Syrup (see below)

25ml Lemon Juice

2 dash Bitters

1 Farm fresh egg white

1 dash floated on top

 

Method: Shake all ingredients with lots of ice and strain into a chilled champagne flute

 

Pumpkin Syrup: Mix and strain the following ingredients over a low heat:  200g Caster Sugar 100ml Water Roughly 2 handfull’s of Pumpkin innards
