buttered marmalade

50ml Chase Marmalade Vodka

1 tsp Winter Spiced Butter (instructions below)

15ml Lemon Juice

15ml Sugar Syrup

150ml Hot Water

Method: Build all ingredients (except butter) into a tempered latte glass and briefly stir. Add spiced butter to the top of hot liquid and stir. Garnish with a fresh cinnamon stick.

Winter Spiced Butter- Toast cloves, cinnamon sticks, nutmeg and star anise in a pan. Add butter along with grated orange zest and melt to ‘beurre noisette’ stage (do not burn). Strain butter through a muslin cloth to catch any bits, pour into ramekins and leave at room temperature to set.
