chase beetroot shots

300ml Chase Vodka 

2kg red beetroot

1 Vanilla pod

50ml olive oil

300ml cloudy apple juice

500ml beetroot juice

75ml sherry vinegar

pinch sugar Method: Peel all the beetroot and chop roughly. Place in a pan and cook with the olive oil, vanilla pod and a little salted water until tender. Strain and remove the vanilla pod. Place into a container with the apple juice, beetroot juice, sherry vinegar and sugar and blend using a stick blender until smooth. Pass through a strainer, add the vodka and chill. To serve fill into chilled shot glasses, garnish with celery salt around the rim.
