CHASE TIPSY MARMALADE PANCAKES

British, bittersweet and indescribably delicious, Chase Tipsy Marmalade Pancakes are smothered in a white chocolate and Chase Marmalade Vodka ganache, and are certain to impress guests not solely on Pancake Day, but anytime, and can easily be whipped up at home following the simple instructions below.

Ingredients

For the Pancakes:

150g plain flour

325ml milk

2 eggs

30g melted butter

2 tsp caster sugar

Seville Orange Marmalade to decorate

For the Ganache:

200g white chocolate

250ml double cream

30ml Chase Marmalade Vodka

Zest of one orange

Melted chocolate to decorate

Start by sifting flour over the eggs in a large bowl. Whisk until there are no lumps.

Add milk, little by little, whilst continuing to whisk. Once the milk has been added the mixture should be a smooth batter that is easily poured.

In a pan, melt the butter and add to the batter along with the sugar. Leave to rest whilst making the ganache.

Add cream, Chase Marmalade Vodka and orange zest to a pan and slowly bring to the boil being careful not to let the cream catch.

Once the cream mixture reaches a boil, immediately remove it from the heat and pour it over the white chocolate. Whisk until all the chocolate has melted and you are left with a smooth creamy mixture. For a stronger tasting ganache, add more Chase Marmalade Vodka.

Leave mixture to cool slightly.

Heat a non stick pan on a moderate temperature, adding a knob of butter enough to coat the surface of the pan.

Using a ladle, pour batter mix into the centre of the pan (the pan is hot enough if an immediate sizzle is heard). Tilt the pan from side to side until you have a thin layer of better covering the pan.

After about 30 seconds use a spatula to ease the pancakes away from the edge of the pan, it should come away with ease and be a golden brown colour on the underneath.

Flip the pancake in the pan and cook for another 20 seconds. Remove from pan and repeat with more batter until you reach the desired amount of pancakes.

Spoon some of the ganache into the pancake and roll. Top with melted chocolate and a spoonful of marmalade.

For an extra kick, try warming a little Chase Marmalade Vodka in a pan, pouring over the pancakes and setting alight!
