Chocolate Marmalade Brownie’s
We can’t get enough of these chocolaty treats that our Laura whipped together last weekend… YUM!
Dare we say it, but if you’re looking for an easy, yet boozy, pudding to bring to this years Christmas dinner, look no further. Featuring our Chase Marmalade Vodka, these Chocolate Marmalade Brownies will have you wishing you made enough mix for a second batch.
· 50ml Chase Marmalade Vodka
· 200g dark chocolate
· 200g coconut oil (or butter)
· 2 tsp vanilla extract
· 200g coconut sugar (or caster sugar)
· 3 eggs
· 250g ground almonds
· a pinch of salt
· 2 oranges
Preheat oven to 170C.
Melt chocolate and butter in a bowl over simmering water until melted and remove from the heat.
Stir in sugar, vanilla, Chase Marmalade Vodka and squeeze the juice from one orange. Set to one side and allow to cool for 5 minutes.
Beat eggs in a large bowl and add in to chocolate mixture and whisk. Add salt and begin to fold in the ground almonds until fully mixed with no lumps.
Grease a small baking tray with butter/coconut oil and pour in the brownie mix.
Bake for 25 minutes.
On a separate tray, thinly slice the remaining orange into slithers and place in the oven for 15 minutes.
Once completely cooled, decorate the brownies with orange zest and orange slices.
Serve with a generous scoop of vanilla ice cream.
