LOVE FOOL PROOF – VALENTINES RECIPES

We’ve put together a selection of recipes that are sure to impress this Valentines Day, each one is slightly more challenging than the last. Enjoy! 

RHUBARB FIZZ

25ml Chase Rhubarb Vodka

Dash of Cranberry Juice

English sparkling wine

Method: combine Rhubarb Vodka and cranberry juice in a chilled champagne flute and top with English sparkling wine. Garnish with a rose petal.

RHUBARB COSMOPOLITAN

50ml Chase Rhubarb Vodka 

12.5ml freshly squeezed lime juice

Dash of cranberry juice

Method: add all ingredientsto a shaker and shake with cubed ice. Double strain into a chilled martini/coupette glass. Garnish with an orange twist.

LOVE POTION JULEP

50ml Chase Rhubarb Vodka

12.5ml freshly squeezed lime juice 

20ml cloudy apple juice

12.5ml vanilla sugar syrup (we use Monin)

Handful of mint

1 dash Angostura Bitters (replace with Rhubarb bitters if available)

Soda top

Method: add all ingredientsto a shaker (except soda) and shake with cubed ice, Double strain into a chilled Julep tin OR rocks glass over crushed ice and garnish with a freshbouquet of mint.


RHUBARB AND WHITE CHOCOLATE TRUFFLES

300g Good quality white cooking chocolate

200g Double cream

37.5ml Chase Rhubarb Vodka

Step 1: Gently heat cream on a low heat until simmering

Step 2: Pour heated cream over chocolate and stir until melted

Step 3: Add Rhubarb Vodka and continue to stir

Step 4: Pour mixture into a separate bowl and place in fridge overnight.

Step 5: Once the mixture has hardened, take a melon baller and scoop out balls of mixture onto a separate baking tray.

Step 6: Chill once again until ready to serve

RHUBARB GRANITA

120g Sugar

440ml Water

2 tbsp Lime juice

5 tbsp Cranberry juice

2 tbsp Chase Rhubarb Vodka

Step 1: Combine water and sugar in a pan on a medium heat and stir until dissolved

Step 2: Remove pan from heat and add all other ingredients

Step 3: Place in a shallow dish in the freezer for up to 6 hours

Step 4: Fork through and serve.

RHUBARB ZABAGLIONE

5 egg yolks

5 tbsp sugar

3 shots Chase Rhubarb Vodka

For Compote:

3 sticks fresh rhubarb

Sugar as needed (Approx. 3 tbsp)

3 tbsp Water

Step 1: Chop Rhubarb into small equal sized pieces and boil in water and sugar solution until thickened and rhubarb is cooked.

Step 2: Place yolks, sugar and Rhubarb Vodka in a heat proof bowl resting over a pan of simmering water *BOWL MUST NOT TOUCH BOILING WATER DIRECTLY.

Step 3: Constantly whisk egg yolk mixture until 3-4x original size

Step 4: Chill compote and serve layered in a cocktail glass

Step 5: Garnish with a fresh rose petal
