Strawberry and Chase Vodka Jelly Tea Cups by Alexandra Dudley

We love these deliciously fruity Strawberry & Chase Vodka Jelly Teacups, the perfect party pudding and a definite crowd pleaser.
350g strawberries, washed with leaves removed
4 shots Chase Vodka (plus an extra ½ shot)
Juice of 3 oranges (or water) (300ml juice approx.)
2 sachet powdered gelatin
Place your sugar and water in a pan over the hob and bring to the boil before reducing to a simmer and leaving for 5 minutes. Remove from the heat and allow to cool
Place your strawberries into the food processor and blend until smooth before running them through a sieve over a bowl to remove the seeds.
Add your cooled sugar syrup and orange juice or water and stir to combine.
Place about 2 tablespoons cold water onto a small dish and sprinkle over your gelatin. Leave for 5 minutes.
Take 250ml of your strawberry liquid and heat gently bringing it to a simmer. Add your gelatin water and stir continuously until all the gelatin has dissolved
Pour back into your strawberry liquid then pour in your 4 shots of Chase vodka. Using a whisk slowly combine everything together.
Pour the jelly mix evenly into your teacups or moulds. You may find it easier to pour the mix into a measuring or pouring jug before pouring it in.
Place your jellies in the fridge and allow them to set for about three hours. Whilst this is happening either slice or chop your remaining 150g strawberries and
transfer to a bowl. Add your pinch of vanilla powder and half a shot of marmalade vodka. Stir well and leave to sit in the fridge.
When you are ready to serve top the jellies with the macerated strawberries and enjoy.
