A Tale of Two Farms – when Chase Distillery met Jake’s Cured Meats
Here at Chase we love the Swedish smorgasbord concept of large platters of smoked meats and delicacies to share with friends. Smorgasbords are the perfect accompaniment to Vodka, as a chilled snaps prepares the palate for the salty or smoked snacks- smooth but neutral alcohol balances the taste buds.
Last week, we welcomed our friends from Jake’s Cured Meats to the distillery to enjoy some pairings and tastings. Jake and Amie founded their charcuterie last April after working over in the French Alpes, where they discovered that salami and cured meats were the alpine snack of choice.
They later went on to learn their trade in the mountains of Tuscany, working with the Norcini’s (pork butchers). On returning to the UK they began creating their ‘Summit Salami’ made from the best British ingredients on their family farm in Herefordshire.
