It was a total pleasure to be invited on a ‘trial weekend’ at Thyme, a sumptuous and indulgent weekend experiencing their unique and exciting offering! Thyme is nestled deep in the Cotswolds and is run by the fabulous Caryn Hibbert and her lovely family. Sharing our passion of transforming simple quality products into delicious delights, they have created a very special cookery school, complete with fantastic rooms (we stayed in ‘Horny Goatweed’!), packed full of personality. Our weekend started with a bang in their newly renovated Baa Bar – Chase Smoked Vodka Martinis were flowing! We then wandered up to their cosy country pub, The Swan, and feasted the night away on local produce, cooked perfectly. After a killer breakfast, we were rounded up and Daryll, one of the very talented chefs, led us to their kitchen gardens to forage for our lunch; fresh pasta ravolio with cerney goats cheese and young runner beans, swimming in a sage butter. To say it was delicious would be an understatement. To follow, we rustled up a tiramisu. Time seems to just disappear at Tyme, and … 5 hours later, we were ready to walk it all off by taking a guided tour around their estate. Whether you’re wanting to cook, eat, drink or simply escape, Thyme will not disappoint. An absolute gem which we know you will love!
