250ml Chase Potato Vodka
1 bottle chilled English sparkling wine
Plum Purée (see below)
Method: Pour 30ml of the purée into each of 8 chilled champagne flutes or similar, add 30ml of Chase Vodka, and divide the sparkling wine among the glasses.
For the purée- Combine 8 medium, ripe in-season English plums, 45ml simple syrup (2/1 water and sugar), and 30ml freshly squeezes lemon juice in a blender and purée until smooth. Strain through a fine-mesh strainer and use immediately.
