Ben Cooke from The Little Gloster on the Isle of Wight was crowned the winner of our Smoky Chase Bloody Mary competition in association with Hot Dinners. It was his magic ingredient – gazpacho made with yellow Isle of Wight tomatoes, fresh horseradish and crème fraiche and topped off with oak smoked tomatoes, a sliver of Gloucester Old Spot pancetta he’d cured himself and a drizzle of coriander oil – that had him crowned him the winner for both visual impact and taste.
50ml Chase Smoked Vodka
Squeeze of lemon juice
Dash of Tabasco
200ml home made gaspacho (Isle of Wight yellow tomato juice, fresh horseradish, crème fraiche, celery salt, toasted coriander seeds, white pepper, Isle of Wight extra virgin rapeseed oil).
Crispy own cured rare breed pancetta
Fennel top stick
Blow torched cherry tomato
SHAKE all ingredients with ice, adjust seasoning to taste, strain and garnish.
