Rhubarb & Rosemary Gin Sour

Ingredients
- 50ml Chase Rhubarb & Bramley Apple Gin
- 25ml Lemon juice
- Sprig of rosemary
- 10ml Sugar syrup
- 1 Fresh egg white
Method
Shake all ingredients except the ice for 10-15 seconds. Then add ice and shake again (this will ensure a nice foam).
Double strain into a coupe glass, garnish with a small sprig of rosemary and a rhubarb ribbon if available.
